We love eating salads in summers. It sounds like such a normal activity on those hot days when as soon as you reach home and want to eat up the whole plate of those veggies, as if I am eating junk.
Oh, I feel so healthy in summers.
Come winters I have to struggle to even cut all the veggies. Needless to say, winters bring along some unhealthy eating habits for our family. That is why while discussing how to incorporate eating more salad in our regular meals, hubs suggested to add an avocado and some lime juice.
We took turns cutting all the veggies nicely, including avocado and half a lime.
As we put everything in a bowl, and tossed the salad, we decided to see if it tasted ok. If we needed to add more salt, black pepper or lime juice.

As we sat down to see what it tasted like, we kept on munching on one veggie after the other. When we looked down at the bowl, the salad was almost gone. We had not even sit down for dinner. We were looking at each other with that look in our eyes, couldn’t you wait for some more time?
Oh well! We were both to be blamed. What could we do? It was just too good to not keep eating. We are just glad that we found our salad that we can add with our meals and try to stay as healthy as we do in warmer months.

Avocado Tomato Cucumber Salad
Ingredients
- 1 tomato
- 1 English Cucumber
- 1/2 Onion red
- 1 Avocado peeled, diced
- 1 tbsp Olive Oil
- 1 tbsp Lime Juice squeezed from fresh lime
- 2 tsp Cilantro Leaves chopped
- 1 tsp salt
- 1/4 tsp Black Pepper
Instructions
- Take all the veggies and chop them in fine pieces.
- Place the chopped veggies in a salad bowl.
- Add the olive oil and lime juice drizzling over the veggies. Toss them with a wooden spatula.
- Add salt and ground pepper. Toss gently again.
- Serve the salad in a plate
