COCONUT BAKES recipe

Ingredients

  • 1 lbs flour
  • 2 cups grated dry coconut
  • 3 tsp davis baking powder
  • 2 tbsp Sugar
  • 1 tsp Salt
  • 1/2 tsp instant yeast
  • 3 tbsp Butter
  • 3/4 Cup coconut milk
  • 3/4 Cup water or milk

Instructions

  • Sift all dry ingredients in a bowl 
  • Then add the grated coconut mix it in with the flour mixture with a fork
    Then butter mix it in with fork
  • (I use a fork cause I do not like the stickiness of the dough on my fingers)
  • Then warm the coconut milk and water then slowly pour into the flour mixture while mixing with fork
  • Continue mixing until it becomes a ball and pull away from all sides of bowl
    Then turn dough over on floured surface and gently kneed for about 5 minutes (adding flour if needed for any stickiness )cover and let sit for 30 minutes
  • Then kneed for about 1 minute and rolled it out elongated (sausage shape) cut into 10 even pieces form them into a ball one by one
  • Then gently flatten with Rollin pin to about 1/2 inch thick and place them on a lightly greased bakingsheet or pan ... let rest for about 20 minutes while oven is heating at about 250° and bake till golden. Enjoy
