Do you know where I am right now? Probably not so I’m going to tell you. I’m in the Dominican Republic!!!!!!! I have never been there before and I’m super excited to spend 5 days on the beach with a drink in my hand and the sand in my toes. I’ve been waiting for this trip for a long time.

Myself and five other coworkers flew out yesterday morning to attend the wedding of another coworker. Not only is this my first time in the DR, this is my first destination wedding. Pumped doesn’t even begin to cover my excitement level!

This puppy chow would have made a great snack for the plane ride, but although delicious, puppy chow is kind of messy to eat and leaves you with some sticky fingers. The funny thing about blogging is I made this treat almost a month ago as a thank you to Dean for watching my turtles over Memorial Day weekend. Blog time does not always equal real time.

Because one batch of puppy chow makes too much for any one person to eat themselves, I portioned out some for Dean in cute mason jars and put the rest in a container to take to work. After my staff’s first encounter with puppy chow, they were excited to eat some more. And no worries, the leftovers were quickly consumed by a few students who didn’t go home after their Regent’s Exam in the morning! Kids love sweet foods.

Cookie butter puppy chow is a good thing, especially for those with a peanut or nut allergy who can’t enjoy regular puppy chow. The cookie butter adds extra sweetness and flavor. Pretty much anything covered in chocolate, cookie butter, and powdered sugar is bound to be amazingly delicious! This is a great treat to bring to any get together because once you start nibbling, it’s hard to stop!

Cookie Butter Puppy Chow Recipe
Ingredients
- 1 stick
- 1/2 cup unsalted butter
- 1-1/2 cups semisweet chocolate chips
- 1/2 cup cookie butter
- 1 box rice Chex cereal (12.8 ounces)
- 3 cups powdered sugar
Instructions
- Melt the butter and chocolate chips over low heat on the stove. Once melted, stir in the cookie butter. Mix until combined.
- In your largest bowl layer the Chex and chocolate mixture. Use a rubber spatula and gently mix, this will take several minutes, but keep mixing to gently coat all the cereal without breaking it up into too many pieces.
- Add 1 1/2 cups of powder sugar to a 1-gallon ziploc bag. Add in half the chocolate covered cereal. Shake the bag and break up the big chunks. Make sure all the pieces are covered with sugar. Dump into another bowl.
- Repeat with the rest of the cereal and powdered sugar.
- Store in an airtight container out of reach so you don’t eat it all!
