Delicious Recipe for Potato Soup

Stick-to-your-ribs and delectable recipe for potato soup. How would you like a nice bowl of rich and hearty potato soup? Well, step right up, here it is.

Potatoes, sometimes maligned and sometimes lauded. The potatoe’s reputation is, at times, tainted due to their starchiness. As most of us know starch turns to sugar in the blood stream. Which can be a problem for those on a low carb diet.

However potatoes, with the skins intact, do have some redeeming qualities. They contain no fat or cholesterol. They are sources of protein, iron, fiber, potassium, vitamins B6 and C, just to name a few. As with anything, eaten in moderation, they can be a benefit to one’s diet.

I have more than a few potato soup recipes, but this one is my favorite. It has a rich tangy flavor because of the buttermilk. Topped with cheddar cheese and bacon bits and a spoonful of sour cream, it is a satisfying bowl of goodness.

Ingredients

  • 1/2 onion, chopped
  • 1 stalk of celery, chopped
  • 1 tbls butter
  • 1/2 tsp dried dillweed
  • 1 1/2 cups peeled red potatoes, sliced
  • 2 cups chicken broth
  • 3/4 cup of milk, at room temperature (low fat or fat free)
  • 1/4 cup half and half
  • 2 tbls buttermilk (or 1 tbl sour cream if you don’t have buttermilk)
  • 2 tbls flour
  • 1/2 cup shredded cheddar cheese
  • 2 strips of bacon, cooked crisp and crumbled
  • 2 green onion chopped
  • 1 tbl sour cream

Instructions

  • In a 4qt Dutch oven melt butter, add onions and celery. Saute over medium heat until onions turn golden. 
  • Add chicken broth and potatoes to sauted vegetables. Bring to a boil, reduce heat and simmer covered for 10 minutes, or until potatoes are cooked. With a potato masher mash ingredients several times until they are coarse but still chunky. Turn off heat.
  • In a small bowl, combine flour, milk, half and half and buttermilk. Blend until smooth. Add to the soup all at once stirring constantly until thoroughly mixed. Turn the heat on and heat for about 10 minutes on low to let the flour dissolve and disburse to thicken the soup. 
  • Serve soup topped with cheddar cheese, bacon bits, chopeed green onions and sour cream. It makes a hearty little meal. Note: I have given this recipe to several people and a few have told me that they have a hard time heating the soup back up as described in “step 3” above. They say that the soup tends to stick to the bottom of the pot. If this happens, you can always mix the flour, milk, half and half and buttermilk in a separate small pot and heat it until it thickens and then pour it into the potato soup stirring constantly until it is blended.
