Easy Pico de Gallo is a great condiment. It goes great with all mexican food, but you can also just add it to couscous or quinoa for a fresh salad. You can eat is straight on a rice cake, or roll it in a fresh tortilla or pita with some chickpeas for a healthy snack. So here’s what you need and how to make it.

Tomatoes, capsicum, cucumber (or zucchini – really!!), red onion, a lime, a couple of chili peppers, coriander (cilantro) and salt & pepper. And garlic. Not in my photo, but pretty essential.

Start with your tomatoes. You have to de-seed them, so slice them in half across the axis.Then make a little cut with a sharp knife where the seeds attach, so you can easily scoop out the seeds with a spoon. See my little slits?
Then dice the tomatoes in three dimensions like this:
and dice your other veggies really finely.
Dice your chilis by slicing in half lengthwise, removing the seeds, slicing into thin strips and then dicing.
Throw everything into a bowl, including some chopped coriander (cilantro). Add juice of half a lime and salt and pepper to taste!
Other things you can add include corn, avocado, other colours or types of capsicum (bell pepper), zucchini, spring onions, mango, and other herbs (parsley is great, and mint if you’re adding fruit). All fresh of course.
Pico de Gallo Recipe
Ingredients
- 8 ripe tomatoes
- 1 red capsicum (bell pepper)
- 2 small cucumbers
- 1 red onion
- 2 chili peppers of your choice
- 1 small bunch coriander
- 1 clove garlic
- juice of 1/2 lime
- salt & pepper to taste.
Instructions
- Dice everything really finely.
- Stir together in bowl, add lime juice and S&P.
- Serve with corn chips, rice cakes, tortillas, beans & rice, burritos, quesadillas, etc!
