Especially if the recipe calls for potato pancakes made with mashed potatoes. Well this recipe is a sure fire cure for potato cakes that crumble and fall apart.
I obtained this recipe from a stranger, actually. I went to a gathering with my husband one evening It was made up of some of his old friends. I wasn’t feeling well and expected the night to be long and drawn out. When I got there, kids were running through the house screaming, dogs barking and jumping on everyone. I thought, oh no, this can’t be good. Then I saw the buffet table. It was very delightful and simple. The food looked quite tempting, so I tried a little of everything. When I tasted what I found out to be a piece “baked” potato cake, I got out my steno pad and was ready to take down this scrumtious recipe. The hostess was very sweet and said she had been making the recipe for years and she would be glad to give it to me. All in all, the night turned out to be quite nice. Although, the next day I came down with the flu.
The second potato cake recipe is one of my own that I have been making forever. These pancakes are so good just hot out of the skillet. I often serve them with a meat that doesn’t have a gravy, like fried chicken.
POTATO PANCAKE RECIPE
Ingredients
- 2 lbs of potatoes
- 1 1/2 cups Parmesan cheese
- 3 eggs
- 1 cup of milk
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Peel potatoes and grate onto a paper towel. Squeeze as much water from the potatoes as you can.
- Place potatoes in a medium size bowl. Add cheese, salt and pepper to potatoes. Beat together milk and eggs and add to the potatoes. Stir to combine well.
- Pour potatoes into a 10″ by 10″ baking dish sprayed with nonstick cooking spray. Bake in 375 degree oven for 35 to 40 minutes until top is golden brown. Serve pieces with a dollop of sour cream and sprinkle with chopped green onions. It’s Yummy!
