You’re going to love theses potato fritters. They are tasty little treats that go with any meal. Kids love them and they are super easy to make.
At times, I have included these fritters as an offering on an appetizer or buffet table. I serve them with cucumber dip or blue cheese dressing.
Potatoes are an everyday staple and can sometimes become boring. But there are many different ways to prepare these delightful little tubers. If you use your imagination, you can get pretty creative with the potato. I have included a few imaginative recipes that you might like to try. Feel free to add you own take on these recipes with some added ingredients you might find palatable.
When I was young, I was a very picky eater. If I didn’t like something, such as potatoes, I would drop them into my napkin when my Mom and Dad weren’t looking. Then, throw them away. I eventually got caught. But, instead of scold me, my Mom tried to make meals a little more interesting, something that I might like. These fritters were the answer. Every time I make them, it takes me back to when I was young and skinny!
POTATO FRITTERS
Ingredients
- 2 cups leftover mashed potatoes, already seasoned
- 1/3 cup flour
- 1/3 cup shredded cheddar cheese
- 1 tbl Parmesan cheese
- 2 eggs
- 1/4 cup of milk
- canola oil for frying
Instructions
- Combine potatoes, flour, cheese, eggs and milk. Beat until light.
- Heat about 3/4 inch of oil in a large cast iron skillet until very hot. Drop potato mixture by tablespoonfuls into hot oil. Cook until golden brown. Drain on paper towel. Top with a little Parmesan cheese. Serve with cucumber dip(recipe below.)
