Frosted Peanut Butter Chocolate Bars Recipe

So I have been obsessed with cooking and baking for a very long time.  Pretty hard to believe right???

When I was younger, instead of wanting to look at Teen Bop or YM (extra points if you remember them!), I would beg my mom to buy me the food magazines at the checkout at the grocery store.  Somehow we ended up with one of the special publications from a peanut butter company (I have no idea what company it was).

In this magazine was one of the best desserts and I used to make it all the time.  You may think this is weird, but to me it is perfectly normal, I have spent hours looking for this recipe on the internet.  We certainly don’t have the book anymore, my mom throws EVERYTHING away and even though I can’t remember the brand name of the peanut butter, I have searched every peanut butter company website for this recipe.  It cannot be found!  This peanut butter cookie bar was made in a jelly roll pan, frosted with creamy peanut butter icing and then drizzled with rich chocolate.  YUM!

Worry not my friends!  I have recreated the recipe!  To the best of my knowledge anyway…and I think I did a pretty good job. Soft chewy peanut butter base, creamy sweet peanut butter frosting, and oh so delicious chocolate goodness.

Frosted Peanut Butter Chocolate Bars Recipe

Ingredients

  • Cookie Base
  • 2 1/2 c flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 c. (2 sticks) butter, room temperature
  • 1 c. brown sugar
  • 1 c. granulated sugar
  • 1 c. creamy peanut butter
  • 2 eggs
  • 2 tsp. vanilla
  • 1/2 c. milk
  • Frosting
  • 1 c. creamy peanut butter
  • 4 c. powdered sugar
  • 1/2 c. milk

Chocolate Goodness

  • 1 c. creamy peanut butter
  • 4 c. powdered sugar
  • 1/2 c. milk

Chocolate goodness

  • 10 oz. chocolate chipes
  • 10 oz. cream
  • 4 tbsp Butter
  • 1/4 c. powdered sugar

Instructions

  • Preheat oven to 350 degrees.
  • Sift together flour, baking soda, baking powder, and salt in a medium sized bowl.
  • In the bowl of an electric mixer, cream butter.
  • Add in sugars and beat until light and fluffy.
    Add in peanut butter and mix until combined.
    Add in eggs, combining well after each egg.
  • Add vanilla.
    Alternate with flour mixture and milk. Mix until well combined.
  • Spread mixture into a greased jelly roll pan (cookie sheet with a rim). Make sure the batter is spread evenly in the pan.
  • Bake for 18-20 minutes or until the edges are brown and a toothpick inserted in the middle comes out clean. You do not want to over bake or your bars will be too crunchy.
  • While the cookie base bakes, make your frosting. In the bowl of an electric mixer, with the whisk attachment, combine the peanut butter and powdered sugar on low.
  • Slowly add in milk. Turn the mixer to medium high and whip the frosting until light and fluffy. Add more milk if the frosting is not a spreadable consistency.
  • When the cookie base is cool, spread the frosting evenly over the pan.
  • Prepare the chocolate goodness by placing your chocolate chips in a heat proof mixing bowl.
  • Heat the cream and butter over medium heat until the mixture is simmering, not boiling.
  • When it is hot enough, pour the milk mixture over the chocolate chips and whisk until smooth.
  • Whisk in the powdered sugar and stir until smooth. Allow mixture to cool to room temperature.
  • When chocolate goodness has cooled to room temperature, pour over frosting and cookie base.
  • Allow the bars to set in the fridge for a few hours, preferably overnight.
  • Use a knife dipped in water to cut the bars.
  • Keep bars in an airtight container in the fridge to keep their freshness.
