Guacamole Spinach Deviled Eggs

Guacamole Spinach Deviled Eggs are nutrition rich, protein packed and loaded with healthy fat. These are perfect for parties, potlucks or picnics!

How do you make your mornings healthier? By eating healthy and filling breakfast. Eggs are supposed to offer really great health benefits, but sometimes it can so boring eating hard boiled, soft boiled or an omelette for breakfast.

Sometimes you need a change. So I decided to go explore more options for our breakfast menu routine. Guess where I went searching? Yup, Pinterest! I saw many different options, but kept coming across guacamole deviled eggs. So decided to give this one a try.

We already love to make this Breakfast Egg and Avocado sandwich, so trying out these guacamole spinach deviled eggs was an easy choice.

I saw lot of guacamole deviled egg recipes, but this one by Gina on Skinny Taste caught my eye. Since I wanted to another healthy ingredient, so spinach it was. Spinach is one of my other favorite veggies to add to any recipe.

As you can see, I did not hesitate to add them to my spinach muffins. Although my four year old loves them and calls them green muffins. I do not correct him, and just hand it to him whenever he asks for it.

Back to our guacamole spinach deviled eggs, these are loaded with healthy fat and loads of fiber, iron and they look super cute. Make sure to try these next time you are stuck for breakfast or snack ideas!

These are super easy to make and don’t take too long to make. Longest time will the time it takes to boil the eggs. After that it doesn’t take too long. You simply peel the hard boiled eggs. If you want to make it even easier to peel the eggs, place the eggs into iced water. Change in temperature makes it easy to peel the eggs.

Once peeled, cut each egg horizontally.

Scoop out the yellow (yolks) part, and place them in a medium sized bowls.

Add avocado.

Mash egg yolks and avocado with a fork.

Add lime juice, salt, pepper, tomato, onion, spinach, cilantro, jalapeno. Mix well. Adjust salt and pepper according to taste.

Once your mix is ready, scoop it into egg halves. Sprinkle with little bit of red chili. You can also top with cilantro leaves.

Enjoy! I always have some mix left behind after filling up the egg halves. You can discard it or just eat it up.

Ingredients

  • 4 eggs hard boiled
  • 1/2 Avocado
  • 1 tbsp Lime Juice
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper ground
  • 1/3 cup Tomato finely chopped
  • 1/4 chopped Onion diced
  • 1/3 cup Baby Spinach finely chopped
  • 1 tbsp Cilantro chopped
  • 1/2 tbsp Jalapeno minced

Instructions

  • Peel the hard boiled eggs. Cut each egg into half. Scoop out the yellow (yolks) part.
  • In a medium sized bowl, place the yellow (yolks) part and avocado. Mash with a fork.
  • Add lime juice, salt, pepper, tomato, onion, spinach, cilantro, jalapeno. Mix well. Adjust salt and pepper according to taste.
  • Scoop the mix into egg halves. Sprinkle with little bit of red chili and salt. Top with cilantro leaves. Enjoy!
