How to make guacamole that will be so tasty that your chips will dip themselves. Guacamole is a basic staple of Mexican food. But now-a-days, its use has expanded into foods of all cultures.
Ahhh the avocado, what a wonderful fruit. It is very high in potassium and fiber. People tend to shy away from avocados due to the relatively high calorie content (about 320 per avocado). However, avocados are, among other things, high in omega fatty acids, which can boost heart health and lower triglycerides, which is the bad cholesterol.
This recipe has one secret that makes it different. You grate the onion into the guacamole instead of chopping it. Its almost like having the juice of the onion. It makes for a smoother and better tasting guacamole.
You can also add chipotles to this guacamole recipe. I learned about smoked jalapenos or chipotles as they are called, some years ago. Chipotles in adobo sauce are great for all kinds of Mexican recipes. They have a unique and distinct smokey flavor. I have used them in soups, shredded beef and a host of other dishes. Try them in this guacamole. It really spices up the flavor.
When refrigerating guacamole prior to serving, often times, in addition to drizzling some lemon juice over the top, I will take plastic wrap and lay it directly on top of the guacamole so that it touches. I will press it down right on to the guacamole to kind of seal out the air. It helps keep the avacado dip from turning dark. It is much like placing plastic wrap directly over the top of pudding to keep the top from becoming hard.
GUACAMOLE DIP RECIPE
Ingredients
- 3 large ripe avocados (peeled and mashed) sprinkled with lemon juice
- 1 tsp chili powder
- 1 tbs chopped mild green chiles
- 1 tsp garlic powder
- 1/2 tsp garlic salt
- 1 tbl grated fresh onion
- 1 tomato, peeled and chopped (optional)
- salt to taste
Instructions
- Mix all ingredients, salt to taste and squeeze juice of l/2 lemon over the top to discourage avocados from turning brown. Cover and place in the refrigerater for about an hour to let the flavors blend.
Notes
add to above ingredients
1/2 peeled and skinned tomato, chopped OR
1 tbs fresh cilantro, chopped OR
3 slices of crisp bacon, crumbled OR Chipotle Gucamole Recipe
3 avocados, peeled and mashed
1 tbl of smoked chipotles in adobo sauce (this makes a
spicy guacamole)
