Potato Salad Recipe
A tasty and quick potato salad that will impress your loved ones. I love to serve it also as a side dish to my Schnitzels.

Ingredients
- 8 medium potatoes
- 1 red pepper
- 1 small red onion
- 1/2 cup chopped fresh parsley
- 5 large radishes
- 1 cup mayonnaise (I prefer Kraft)
- salt & pepper to taste
Instructions
- Wash well the potatoes with the skin on and boil them in water with salt until fork tender. Let them cool a little and remove the skins, then cut them in about 1 inch cubes.
- Cut the red pepper and the radishes in cubes or slices as you prefer and the onion julienne. Chop the parsley and add them all to the potatoes. Add the mayonnaise, the salt and pepper and mix all together then cover and refrigerate for at least an hour for the flavors to combine.
