Hi There my friends! How’s it going? How was your summer? I have been traveling in the last month and haven’t had time to update my blog and post any new recipes. I know I know! I missed you all too
But I had a great time visiting my sister and her family in sunny California. Her three boys and my son had a great time bonding, and had the best time ever. SV, my son, did not want to come back, and now that we are back home, he has been bawling every time we talk about the boys or our travel.

I have a self imposed rule of unplugging while on vacation. I put away my smartphone and tab for good three weeks (on and off) this time, so I could not post any updates. But now I am back, rejuvenated and ready with my appliances and tools in my kitchen, I can’t wait to try new recipes and share with you all!
Last night I whipped up this super healthy chickpeas and spinach salad. I have always loved chickpeas since I was a child. My mom used to make chickpeas curry with lots of spices. Besides their deliciousness, I love that these legumes are high in fiber and protein and support strong digestive system. Spinach is another vegetable I try to use often in my cooking. Most of the time I make sure that my family is consuming this iron rich veggie in it’s raw form, obtaining the maximum benefits it has to offer.
Well, if you look at the picture, there are many other ingredients in this salad besides chickpeas and spinach. There’s hard boiled eggs, avocado, strawberries, orange. I wasn’t sure what to name this salad though. When I first started making it, I just mixed chopped spinach and boiled chickpeas, added some lemon juice, salt and black pepper.
Knowing that we are going to have salad for dinner, my husband decided to make himself boiled eggs and avocado sandwich. I had a light bulb moment right there. Why not add a few slices of boiled egg and avocado to my salad as well? There were some strawberries and oranges in the fridge, so I cut them into small pieces and arranged in my scrumptiously arranged salad bowl.
You can add a dressing of your choice, I added ranch to mine. Although I sometimes use just the lemon juice and that’s good enough dressing for me. I am sure you are tempted to try and eat this super dooper delicious and healthy salad for dinner.

Super Healthy Chickpeas Spinach Salad Recipe
Ingredients
- 1/2 cup Chickpeas canned or boiled
- 2 Eggs hard boiled
- 1 Avocado peeled, pitted, sliced
- 15 Baby Spinach washed, chopped
- 1 Orange sliced
- 5 Strawberries fresh, chopped
- 1 tbsp Ranch Dressing
Instructions
- In a large bowl, add chopped spinach, chickpeas, strawberries, orange.
- Top with egg and avocado slices. Garnish with ranch or dressing of your choice. Toss salad gently.
- Serve in salad bowls.
