Holy crap, is it seriously March already?  That means two things:

1.  This year is going by way too fast already.

2.  So are my twenties.  In less than two weeks, I will turn thirty years old.

(Pause while I hyperventilate into a bag)

Ok, so let’s just turn our thoughts now to things that comfort me, rather than totally freak me out.  Like warm sweet potato biscuits, spread with honey and butter.

This month’s 5 Great Recipe collection is all about my favorite little tuber, the sweet potato.  Loaded with Vitamin A, folic acid and potassium, sweet potatoes are one of my great loves and I always have a couple stashed away for emergencies.  You know, a girl can find plenty reasons to eat sweet potatoes.  I happen to be quite good at finding them.   Get ready!

Sweet Potato Biscuits Recipe

Ingredients

  • ½ cup mashed roasted sweet potato (about 2 large potatoes, roasted)
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoons coarse sea salt
  • 1 scant tablespoon butter, plus 3 tablespoons ice cold butter, diced into cubes
  • 1 ¼ cup all purpose white unbleached flour, plus more for rolling out the dough
  • 1 ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • pinch of cayenne pepper
  • 2 tablespoons plus 2 teaspoons buttermilk

Instructions

  • Make sure the potato is well mashed, with no lumps; this is best achieved with a potato masher or putting the potato through a ricer or food mill. Cream together the brown sugar and the mashed sweet potato and set aside.
  • In a large bowl, combine the salt, ice cold butter cubes, flour, baking powder, baking soda and cayenne pepper. Using your hands or a pastry knife, cut the butter into the flour until the flour looks like large grains of wet sand.
  • Blend the potato and buttermilk into the flour mixture, stirring only until just combined. The dough will be very sticky. Wrap it in cling film and chill for 20 minutes.
  • Generously flour your work surface and a rolling pin and roll the dough out until it is about ½ inch thick. Using a knife, an upturned glass or a biscuit cutter, cut out your desired shapes and place them on a greased baking sheet.
  • Melt the remaining butter and brush it onto the tops of the biscuits. Sprinkle on coarse sea salt and freshly ground pepper to each biscuit if desired.
    Bake at 350*F for 12 minutes, then rotate the pan and bake another 12 minutes more. Remove from the oven and let cool slightly before serving.
