- 3 1/2 lbs baby back ribs, membrane removed
Dry Rub Marinade
- 1 tbl salt
- 1/2 tsp ground allspice
- 1/2 tsp fresh ground pepper
- 1/2 cup canola or peanut oil
- 1/2 cup soy sauce
- 3/4 cup honey
- 1 tsp thyme or sage
- 1 tsp cayenne pepper or chili powder
- 1/4 tsp apple cider vinegar
Mix the salt, allspice and pepper. Rub the mixture into both sides of the ribs. Cover and refrigerate overnight for best results.
Combine all barbecue sauce ingredients in a bowl and stir well. Remove ribs from the refrigerator and let come to room temperature. Pour a small amount of the marinade into a custard dish. From that dish, paint a liberal coating of the sauce on both sides of the ribs. Reserve rest of marinade. If you are going to grill ribs on the barbecue proceed as follows: In a roasting pan or pans, place ribs curved-side down. Roast 20 minutes on each side in a preheated 375 degree oven.
Meanwhile, light charcoal briquets and let burn down to a hot gray ash. Place ribs on the grill sprayed with nonstick coating. Grill for 15 to 20 minutes, turning and basting with sauce, until done.
If you plan on cooking the ribs in the oven proceed as follows: After removing ribs from the refrigerator, place curved-side down in roasting pan. Roast at 325 degrees for about 1 hour. Finish under a low broiler. Serve with coleslaw and corn on the cob.Baked pork ribs can be easier and every bit as tasty as barbecue grilled ones.
This barbecue pork ribs recipe can also be prepared by lacing the ribs on a spit and cooking over an indirect fire (which means the fire is to one side of the barbecue and not directly under the food). When I use this method, I usually place the cover on the barbecue. The food cooks best that way.
