Ingredients

  • 30 button mushrooms
  • 75 g (2.5 oz) short cut bacon, trimmed of all fat (or use ham)
  • 125 g (4.5 oz) light cream cheese
  • 75 g (2.5 oz) grated light cheddar (tasty) cheese
  • 75 g (2.5 oz) grated light mozzarella cheese
  • 1 – 2 t finely chopped fresh parsley

Instructions

  • Pop the stems out of the mushrooms and finely dice the stems. Finely dice the bacon too and put the bacon & diced mushroom stems in a medium mixing bowl.
  • Add the cheeses and parsley; mix all the ingredients with your hands until well combined.
  • Stuff each mushroom with about a tablespoon of the cheese mixture.
  • Bake for about 15 minutes at 180C.
