Ingredients

  • 1 tsp canola
  • 3 carrots, sliced
  • 4 celery stalks, chopped in 1/2 inch pieces
  • 1/2 cup onion, chopped
  • 5 cups chicken broth
  • 1/2 tsp poultry seasoning
  • 1 tbl parsley flakes, or finely chopped fresh parsley
  • 2 cups chopped chicken (I sometimes use a roasted chicken from the super market)
  • 1 1/2 cups wide egg noodles (or any type of noodle you prefer

Instructions

  • In a 4qt stock pot, heat oil. Add carrots, celery and onions and saute until the onions become translucent, but not brown.
  • Add chicken broth, poultry seasoning, parsley and chopped chicken to the pot and simmer covered for 15 minutes.
  • Add egg noodles and simmer uncovered for another 10 minutes.

Notes

I like to serve this soup with a little Parmesan cheese sprinkled over the top. But then I like Parmesan cheese sprinkled over the top of any soup. You might want to try it.
