Remove sausage from their casings. Brown in a medium skillet, breaking up the sausage into small pieces.
Meanwhile, toast English muffins in toaster until they are a deep golden brown. Set aside.
Pour stewed tomatoes in a collander and squeeze out as much of the juice as possible. This step is crucial to the crunchiness of this English muffin pizza recipe. If the tomatoes are too wet, they will cause the English muffins to become soagy.
Cover a large baking pan with foil. Set the eight muffin halves in the pan.
Divide the tomatoes evenly over the eight English muffins. Place enough sausage over the tomatoes to cover the muffin. Sprinkle each muffin with garlic powder, garlic salt and oregano (if you are using fresh chopped basil, now is the time to add it). Sprinkle each muffin with about a 1/2 teaspoon of Parmesan cheese. Top with 3 or 4 pieces of the sliced Mozzarella cheese or a rounded tablespoon of shredded. The toppings should be piled high. Cook in a 350° oven for 20 minutes or until cheese is melted and begins to brown. Serve immediately.
