Ingredients
1 1/2lbs offlap meat or skirt steak
1tblcanola oil
Marinade:
1/4cupcanola oil
1/4cupwhite vinegar
1limejuiced
1/2juice of an orange
3garlic cloves, smashed with the back of a fork
2tblsfish sauce or oyster sauce (can be purchased in the Asian section of your super market)
1/2tspcumin powder
1tspchile powder
1tsp dried oregano
1tspgarlic powder
Dressing for Tacos:
1onion, chopped
1/2cup offresh cilantro, chopped
1lime
corn tortillas, softened in a skillet
Instructions
Thoroughly blend all of the marinade ingredients with a wire wisk. Place the sliced steak in a glass dish. Pour the marinade over the steak. Make sure all of the steak is covered with marinade. Cover and marinate for 1 to 2 hours.
Meanwhile, combine the chopped onion and the chopped cilantro.
When marinate time is complete, remove steak from marinade. Heat a tablespoon of canola oil in a large cast iron skillet over medium high heat and sear steak quickly (not more than a minute or two). I will either serve meat as is, or I will sometimes chop it into bite-size pieces. Then, cradle in warm tortillas with onion and cilantro relish and a squeeze of lime. Yum!
Notes
Tip: To make the steak easier to cut thinly for this carne asada recipe, stretch the meat out, roll it up and place it in the freezer for about an hour. Then remove from freezer and cut the rolled steak while it is semi-frozen. It will be cut in long thin strips.Tip: To soften tortillas, place a small skillet on a medium high heat. When pan is very hot, place tortilla in pan, When steam comes up from sides of tortilla, flip tortilla. When steam again begins to come up from the sides of the tortilla, it is done.
