POTATO PANCAKE RECIPE

Ingredients

  • 2 lbs of potatoes
  • 1 1/2 cups Parmesan cheese
  • 3 eggs
  • 1 cup of milk
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Peel potatoes and grate onto a paper towel. Squeeze as much water from the potatoes as you can.
  • Place potatoes in a medium size bowl. Add cheese, salt and pepper to potatoes. Beat together milk and eggs and add to the potatoes. Stir to combine well.
  • Pour potatoes into a 10" by 10" baking dish sprayed with nonstick cooking spray. Bake in 375 degree oven for 35 to 40 minutes until top is golden brown. Serve pieces with a dollop of sour cream and sprinkle with chopped green onions. It's Yummy!
