Birthday Cake Recipe

how to make Birthday Cake Recipe ? Enjoyed doing this for my nephew. Yes, some people will argue that it's not red velvet cake because it has no cheese cream but I insist it is. I must say it's the most delicious of all the velvet cakes I've tried out so far.

  • 3/4 tsp salt
  • 1/2 cup vegetable oil
  • 100 gms margarine (for delicious smell)
  • 1 tbsp white vinegar
  • 2 tbsps red food clour
  • 1 cup sour milk
  • 2 tbsps vanilla essence
  • 3 eggs

Butter Cream Icing Ingredients;

  • 250 gms margarine
  • 500 gms icing sugar
  • 1 tbsp milk
  • 1 tsp vanilla essence

  • - Sift the flour, corn starch, baking soda, baking powder and salt together
    - In another bowl, put the sugar, margarine, vegetable oil, vinegar, food colour, vanilla essence, eggs and sour milk then beat on medium speed till well mixed
    - Now add the dry ingredients to the wet ingredients and beat on high speed using the flour hooks till the mixture is smooth
    - Pour in a greased then lightly floured or sprayed baking pan and bake in a preheated oven at 180 degrees for about 45 minutes or till a tooth pick comes out clean when inserted into the cake then it's done.

Butter Cream Icing

  •  Cream the margarine and icing sugar till fluffy
    - Add the milk and vanilla essence and continue mixing till smooth then put in the fridge for about 10 minutes to set then decorate cake as desired.
Did the dripping thing for the very first time, just mixed icing sugar, egg white and lemon juice to make some cream which is neither too thick nor too thin then used a scooping spoon to drip it round the cake before putting the decorations.
