March Madness Deviled Eggs Recipe
These fun and festive deviled eggs are the perfect appetizer for your March Madness party.
Servings 4 people
- 12 hard-cooked eggs, peeled
- ⅔ cup mashed, cooked sweet potato
- ⅓ cup mayonnaise
- ⅔ cup plain Greek yogurt
- 1 tsp dry mustard
- 1 tsp kosher salt
- 1 tbsp sriracha
- 1 tsp curry powder
- ½ tsp sweet paprika
- 1 tsp sweet paprika for dusting
Cut eggs in half lengthwise and spoon yolks into a bowl. Reserve whites. Mash yolks with a fork. Mix in the remaining ingredients and stir until well blended.
Mound the whites with yolk mixture using a 1½ inch ice cream scoop.
Sprinkle with sweet paprika if desired.
Refrigerate at least 1 hour before serving.
